Misconceptions

False
Socrates said: "I know that I know nothing."

The phrase is not in Plato. In the Apology, Socrates only says he is wiser than another because "what I do not know, I do not think I know either".

Nuanced
We know exactly what Socrates thought.

Socrates wrote nothing. We know him through Plato, Xenophon and Aristophanes, who do not say the same things. Separating the historical Socrates from Plato's character remains an open problem.
